Ingredients

• 9½oz plain flour, sifted
• 1 tspn salt
• 1 tspn sugar
• ¼oz active dry yeast
• 6 fl oz lukewarm water
• 3 tbsp olive oil
• polenta (cornmeal) for dusting
  
  To make dough, sift flour and salt into a large bowl, stir in sugar and yeast and make a well in the center. Add water and oil and mix to make a dough. Knead dough lightly on a well-floured board for 4-5 minutes or until smooth and elastic. Place into a buttered bowl, turning dough to coat with butter. Cover and let rise in a warm, draught-free place for 1 hour or until doubled in size.
