Ingredients

• 4 oz mayonnaise
• 3½ oz thick natural yogurt
• 2 tbsp fresh ginger. grated & peeled
• 2 tbsp lime juice
• 2 tbsp honey
• ¼ tspn ground cardamom
• freshly ground black pepper
• 4 boneless chicken breast fillets, cooked and cubed
• 1 mango, chopped ( reserve 2-3 chunks for garnish)
• ½ honeydew melon, cut into cubes
• 3 tbsp finely chopped fresh mint
• pita bread or flat bread to serve
• chickory leaves or other salad greens to serve
  

1. Place mayonnaise, yogurt, ginger, lime juice, honey and cardamom in a bowl and mix well. Season to taste with salt and black pepper
2. Add chicken, mango, melon and mint leaves to bowl and toss to coat. Serve salad with bread and greens and garnish with reserved chunks of mango
