Spiced Fried Calamari



Ingredients

oil for frying
1 lb calamari (squid rings)

Marinade
2 tspn tamarind juice
¼ tspn ground saffron
1 tspn grated fresh ginger
2 cloves garlic, crushed
2 tbsp teriyaki sauce
3 fl oz corn oil

Batter
5 oz plain flour
5 tbsp water
1 egg, beaten
freshly ground black pepper

  1. To make marinade, combine tamarind juice, saffron, ginger, garlic, teriyaki sauce and oil in a glass bowl. Add calamari rings, toss to coat and set aside for 30 minutes.
  2. To make batter, place flour in a mixing bowl. Gradually stir in water, then the egg and pepper to taste.
  3. Heat oil in a wok or frying pan. Drain calamari, dip them in batter and fry in hot oil until golden brown and crisp. Drain on paper towels and serve

Tamarind Juice : To make tamarind juice, soak 1 oz tamarind in 5 fl oz warm water for 5 mins. Squeeze the tamarind to extract as much pulp as possible, then press the mixture through a sieve into a bowl. Use at once. {Return}
