Devilled Lamb Cutlets



Ingredients

8 lamb cutlets
1 tspn salt
1 tspn dry mustard
1 tspn ground ginger
1 tspn curry powder
2 tspn sugar
2 tbsp tomato relish
2 tbsp fruit chutney
1 tbsp worcestershire sauce

  1. Trim the cutlets and rub well with mixed spices and sugar. Allow to stand at room temperature to marinate for 1 hour.
  2. Cook cutlets under a preheated medium grill for 3 minutes on each side. Place relish, chutney and Worcestershire sauce in a bowl, mix well and spread over cutlets. Cook for 2 minutes more or until cooked to your liking.
  3. Idea : Cool cutlets and package for picnic with paper napkins
