Veal Cutlets with Prosciutto
  • 4 veal rib chops, trimmed and pounded lightly to flatten
  • seasoned flour
  • 1 egg, beaten
  • 4 oz breadcrumbs, made from stale bread
  • 1½ oz butter
  • 1 tbsp olive or vegetable oil
  • 4 slices prosciutto or cooked ham
  • 1-2 oz parmesan cheese shavings
  • 4 tbsp single cream
  1. Coat cutlets with seasoned flour, dip in egg and press into breadcrumbs to coat.
  2. Melt butter and oil in a frying pan over a moderate heat. When foaming, add cutlets and cook for 1 minute each side or until tender. Drain on paper towels.
  3. Place cutlets on a baking sheet. Top each with a slice of prosciutto or ham, some parmesan cheese shavings and 1 tbsp cream. Cook under a preheated medium grill until the cheese melts.
