veal rib chops, trimmed and pounded lightly to flatten
- seasoned
flour
- 1
egg, beaten
- 4
oz breadcrumbs, made from stale bread
- 1½
oz butter
- 1
tbsp olive or vegetable oil
- 4
slices prosciutto or cooked ham
- 1-2
oz parmesan cheese shavings
- 4
tbsp single cream

- Coat
cutlets with seasoned flour, dip in egg and press into breadcrumbs
to coat.
- Melt
butter and oil in a frying pan over a moderate heat. When foaming,
add cutlets and cook for 1 minute each side or until tender. Drain
on paper towels.
- Place
cutlets on a baking sheet. Top each with a slice of prosciutto or
ham, some parmesan cheese shavings and 1 tbsp cream. Cook under a
preheated medium grill until the cheese melts.
