Sautéed Chicken in Curry Cream Sauce

  1. Preheat oven to 300°F.
  2. Melt butter in a large frying pan, add chicken breasts, and cook over moderate heat until golden on both sides.
  3. Place in an ovenproof dish and continue cooking in oven.
  4. Meanwhile, add coconut cream, coriander, cumin and curry powder to fat remaining in pan.
  5. Cook, stirring, until sauce is reduced to about half.
  6. Arrange cooked chicken fillets on a serving plate, pour curry sauce over top and sprinkle with fresh herbs.
