  1. Heat oil in a large frying pan.
  2. Add onion and fry over gentle heat until tender.
  3. Add garlic, spices and flour and cook, stirring, for 1 minute.
  4. Stir in water, canned tomatoes and potato.
  5. Bring to boil, then simmer for 15 minutes.
  6. Add aubergine, courgettes and red pepper and cook for 10 minutes or until vegetables are tender.
  7. Stir in coconut milk and heat.
