Tomato Gratin
Ingredients
½ tspn dried basil
½ tspn dried thyme
freshly ground black pepper
1 lb ripe tomatoes, sliced
1 small onion, finely chopped
1 oz parmesan cheese, grated
2 oz wholemeal breadcrumbs
2 tspn olive oil
1. Mix together the basil and thyme, season with pepper.
2. In a shallow ovenproof dish arrange one-third of the sliced tomatoes. Sprinkle over one-third of herb mixture and half the onion.
3. Repeat layer then arrange remaining slices of tomatoes on top.
4. Mix together the remaining herbs, cheese and breadcrumbs and scatter over the top. Drizzle with olive oil.
5. Bake for 20-30 minutes, until tomatoes are tender and topping browned.
