Ingredients
  • 5 eggs, separated
  • 2½ oz castor sugar
  • 1 lb mascarpone cheese
  • 1-3 tbsp rum
  • 8 fl oz strong black coffee
  • 8 oz sponge fingers
  • 2½ oz cocoa powder, sifted
  • 2 oz dark chocolate, grated
  • 5 oz raspberries or strawberries
Preparation & Cooking Instructions
  1. Place egg yolks and sugar in a large bowl and beat until very thick and pale. Add mascarpone cheese and rum to taste and mix gently. Beat egg whites to stiff peaks and fold into mascarpone mixture.
  2. Brush sponge fingers with coffee and use to line the base of a serving bowl. Add ¼ cheese mixture and sprinkle with ¼ cocoa. Repeat using remaining cheese mixture and cocoa to make four layers. Decorate with chocolate and berries. Cover and refrigerate for 24 hours.
