Ingredients
- 5 eggs, separated
- 2½ oz castor sugar
- 1 lb mascarpone cheese
- 1-3 tbsp rum
- 8 fl oz strong black coffee
- 8 oz sponge fingers
- 2½ oz cocoa powder, sifted
- 2 oz dark chocolate, grated
- 5 oz raspberries or strawberries
Preparation & Cooking Instructions
- Place egg yolks and sugar in a large bowl and beat until very thick
and pale. Add mascarpone cheese and rum to taste and mix gently. Beat
egg whites to stiff peaks and fold into mascarpone mixture.
- Brush sponge fingers with coffee and use to line the base of a serving
bowl. Add ¼ cheese mixture and sprinkle with ¼ cocoa.
Repeat using remaining cheese mixture and cocoa to make four layers.
Decorate with chocolate and berries. Cover and refrigerate for 24 hours.
