For the Roast Pork : Place onions and carrots in roasting pan. Rub pork
with salt, oregano and coriander. Place pork on top of vegetables. Add beer
and cover. Roast at 350° for 2¾ hours. Add more beer, if necessary.
Slice and serve pork with hot dip or green sauce, rice and refried beans.
Note: This may be cooked in a slow cooker on a low setting with 2 cups beer
for 8 to 12 hours.
For the Green Sauce : Heat oil in small skillet. Sauté onion and
garlic until limp.
Drain tomatillos; reserve liquid.
Combine tomatillos, ½ cup reserved liquid, onion, garlic, oil, oregano,
and cilantro in jar of electric blender and puree.
Heat skillet over moderate heat.
Pour in sauce and cook for 10 minutes.
Remove from heat and add wine, vinegar, salt, and pepper.
