Fried Fish with Garlic Sauce
Ingredients
4 skinless fillets of white fish
¼ cup self-raising flour
1 egg, lightly beaten
¼ cup cold beer
¼ cup olive oil
¾ cup breadcrumbs
Garlic Sauce
2 large potatoes, peeled
4 cloves garlic, crushed
1 tbsp white wine vinegar
salt and freshly ground pepper to taste
¼ cup olive oil
Preparation & Cooking Instructions
Cut each fillet in half lengthwise and pat dry with paper towels.
Sift flour into a small bowl, making a well in the center. Gradually add
the combined egg and beer. Using a wooden spoon, beat until all liquid is
incorporated and the batter is lump free.
Heat oil in pan. Dip the fish into batter one at a time, drain off excess
and coat with breadcrumbs.
Cook fish in oil over a medium heat for 2 minutes each side or until golden
and cooked through. Remove and drain on paper towel, repeating with remaining
fish. Serve with garlic sauce
To make the Garlic Sauce : Cut potatoes into ½" cubes. Cook
for 8 minutes, drain and mash until almost smooth. Add garlic and vinegar
- mix well and season to taste.
Add oil a few drops at a time, beating constantly until all the oil has
been added and the mixture is thick and smooth. (may take 5 minutes)
