Chicken, Ham and Celery Salad



Ingredients

¾ cup small pasta ( shells or macaroni)
2 cups thinly sliced celery
1 cup diced ham
2 cups cooked chicken
1 green apple, peeled cored and finely diced
½ cup chopped pecan nuts or walnuts
For the Dressing:
¼ cup light olive oil
1 tbsp white wine vinegar
1 tbsp lemon juice
½ cup mayonnaise
¼ cup sour cream
½ tspn each of salt and pepper
2 tbsp shredded fresh mint

1. Cook the pasta according to packet instructions. Drain well, then rinse with cold water and drain again
2. Meanwhile, mix the celery, ham, chicken, apple and nuts in a large bowl. Make the dressing by whisking all the ingredients together in a medium sized bowl. Season well
3. Add ¼ cup of the dressing to the pasta and place on the base of a shallow bowl or platter. Mix the remaining dressing into the chicken and ham salad and spoon on top of the pasta. Refrigerate if you wish, and serve within 4 hours so that all the ingredients remain crisp and fresh.
