Bacon and Bean Hot Pot



Ingredients

8 oz bacon
8 oz carrots, peeled and diced
12 oz potatoes, peeled and diced
15 oz can mixed beans
14 oz can chopped tomatoes
2 tbsp worcestershire sauce
1 tspn English mustard
salt and freshly ground black pepper
½ French stick
2 oz garlic butter, softened
2 tbsp chopped fresh herbs

1. Grill the bacon until crispy.
2. Meanwhile, bring a large pan of water to the boil and cook the carrot and potato dice for 5 minutes. Drain the beans and mix with the chopped tomatoes, Worcestershire sauce, mustard and seasoning.
3. Snip the grilled bacon into small pieces and stir into the bean mixture with the cooked carrots and potatoes. Return the heat, cover and simmer for 10 minutes.
4. Slice the French bread into 1" rounds. Mix the garlic butter with the herbs and spread over each of the bread rounds.
5. Arrange the bread around the bacon and bean casserole and place under a preheated grill for 3 to 4 minutes, so the bread becomes golden.
