Avocado Julienne Salad



Ingredients

  1. Cut red or green pepper, carrot and scallions into fine julienne strips. Blanch strips in boiling water for a few seconds, drain, rinse and pat dry with paper towels in a bowl
  2. To make dressing, place oil, vinegars, rum and mustard in a screwtop jar with black pepper and Tabasco sauce to taste and shake well to combine. Pour over vegetables and toss.
  3. To serve, pile vegetables into avocado halves.
